How to disable alarm system

The alarm sytem is composed of multi components, each tied together..
..the Central Locking System, The Anti Theft System, The Ultra Sound Monitor (for the Interior) and the Starter System (for the Immobilizer.
This all spans across multiple fuses, and a relay (for the Starter Interlock).
Yes, it can be disabled, but unless you seriously know what you are doing, you should not attempt it.
I would recommend going to a local stereo/alarm shop in business for a while, and see if they will be willing to disable it for you or further diagnose it if you want to repair it.

If you give up, different ways to kill it without irreversible damage...
I think what is probably bugging you is the sound from your original post. Thus, just disconnect the (wimpy) horn that it uses by pulling the plug and taping up the wires. In the left rear fender area as I recall. Still leaves the lights flashing for a few minutes.
I also seem to recall that if you supress the locking chirp moise via VAG COM, that it also supresses the alarm horn.
Alternately in VAG COM, I think there is a coding setting to tell it the car has an alarm in the first place. Thus, I expect if you subtract out the bits that VAG COM tells you are for the alarm feature in general, it should get a software lobotomy so to speak.
If you do it any of these ways, it's fully reversible.
