For the record, I live in Ohio so often times temps do drop to below 20 degrees.
I'd run full synthetic 0/40.

Since it's there, just let them fix it. It's cold, PCV system is brittle, car is already there, and system isn't cheap anyway.

0w-40 for northern winter climates.

I found the entire Assembly for $170

http://www.ecstuning.com/ES4728/

And I know a guy that owns a shop that will put it on for $60. So I'm going to go ahead and go that route. And I'll definitely be putting in 0W-40. Any particular brand that you guys prefer?

Now I just wish I could find the secondary air pump for cheaper than $700.

Remove and rebuild the SAI pump. There are instructions on the web and within this site.

How many hours of labour is it? The spider hose assembly is under $200 in most places I've seen.

I'm going to guess it's about 1.5 hours. Audi wanted to charge me about $940 total including the part and labor. They wanted to charge me $768 for just the part.

Also as a side question - will all of a sudden putting in 0W-40 Full Synthetic oil have any side effect if that type of oil wasn't normally in the engine anytime recently?

It is a slightly thinner oil, which is what you want for cold climate. It may seep past some seals, but unlikely.

Is it safe to use even once summer comes around and we are back into the 90 degrees every day?
