A donor engine itself isn't that hard to find, is it? As other say, it
shouldn't be that hard to do a swap - find a specialist who knows what they are doing. As for the cat, can't you get a generic one with a similar number of cells as the original?
It looks like a nice unmolested car. Some day it will be a classic. Not '57 Chevy classic, but a nice toy. Start collecting seals, gaskets, and switchgear on ebay and specialty sites. It's the trim that often gets hard to find first, since it's not a regular wear item that gets refreshed like fuel filters and valve cover gaskets.

Wow, super clean body
really nice interior, usually the driver seat is pretty well shot. Very nice!
But I still think you should sell it to me for next to nothing.

Are the valve guides worn?
Have you done a compression and leak-down test on it yet?
Engine smoke at all, either on start-up or at any other time?
Oil consumption areas I've experienced with the 7A engine are valve stem seals and guides.
I'd also consider spending the money to ditch the NLA Hitachi injectors that are expensive if you can find them, and are generally quite crappy. 034Motorsport has adapters with new, much more readily available injectors.
Other areas to check out are the power steering hoses and AC system hoses. They all tend to leak as they age, and OEM replacements are expensive.
