How come you cannot totally disable the Stability Systems on a SQ5?

I'm heading up to our regional quattro club's winter driving school in a couple of weeks. I'll be interested to see how this thing behaves on the skid pad. We get one or two American SUVs each year and it's almost impossible to get them to rotate due to the intrusive electronics.
