Well...

The feel of it is noticeably "smaller" when driving.

It is "much" thicker at the 3 and 9 positions, where your hands are most of the time, plus the thumb grips are much better.

The S button still works the same way it did before (better throttle response), but it would no longer control the exhaust valve...

Yes all of the old controls will still work. The only time they will start being a problem is after you recode and get the S button and VDO buttons set to the wheel.

The other plug is for the airbag and it's not part of the wheel.

When you remove the wheel and airbag you will see what I'm talking about
