Our axial float is based on the length of our hardware combined with the belleville washers. The radial float is achieved by slotting the rotors, just as you do.

The rotors I personally have seen on street oriented kits had different rotors, however I have not seen a Brembo GT kit recently. There are also companies who sell Brembo "kits" with Brembo calipers...

Yes, we do run the belleville springs on all of our race setups. Rotors are not changed every race - in fact 2 cars last year ran 1 set each for the entire season!
