I've tried and tried to get up the nerve to do 3,500 RPM hold launches, but just can't...

here's the problem with the upswing dump
It is very tough to watch the light tree AND concentrate on blipping the throttle at the right time. It's much easier to look down at the tach as soon as you stage and get the rpm's where you want them, then look back up before the tree starts counting down.
I do rpm upswing launches on the street no problem (other than my first gear starting to whine.) Try it at the dragstrip and you'll see what I'm talking about. The biggest problem is doing enough passes to learn the timing of everything, etc.
Is it really easier on the drivetrain either way? Dumping the clutch puts a pretty rough shock load on everything whether you're dumping from steady state or rising rpms.
