Drivers side CV boot is fried (BWW). Do you guys replace just the boots,
or do you replace the whole CV joint while youre at it? Estimated time for the labor to replace the boots? Im guessing i would just go ahead and replace the pass side boot while the drivers side is getting done... thanks!

This is crazy how all these CV boots are going at the same time. Mine's going in tomorrow to get
replaced under CPO. Same side (Left front) but you have to figure if one's on the way out, they probably all are.

I've done just the boot before and it was fine
I would get the rebuild kit, ditch the grease that it came with and get the redline grease. I'd do both sides of the car and both sides of the CV joint, if I were you. Make sure you clean out the bearings very well. I used brake cleaner until it came out clean, then high pressure hose then air. Let it air dry, then repack till you can't repack anymore.
Don't remember which was it was but it really helps to turn the wheel away from you me thinks while working, makes pulling the CV joint out easier.

The only exception would be if the CV-joint has been run for a long time like that and is showing signs of having gone. But if it is changed quickly then you only need to do the boot.
But do take a look at the inner boots also and see how they look. Would be a shame to take it all apart to do the outers and then have the inners go in a week.
