Default The top of the wheel fits the roundness of the dash, and it's high enough to see all the gauges

My seat is very high as well, for I like to see the front of the car, etc...however, overall the wheel is pretty low

I like it lower than I have it, but I had to raise it to keep from blocking the gauges

It's supposed to be aimed at your chest for the airbag.

Default Second, my seat is high, wheel covers the curve of the dash, just above the tops of the gauges.

I sometimes bump my thigh when I get out of the car.

Default Huh? I think setting the wheel for proper handling would be better...

...this would hopefully preclude the need to use the airbag.

Default I put it to where it feels comfortable.

This means that it is high enough that it doesn't hit my legs, and extends out a distance to ensure my elbows are at more or less a 90 degree angle while gripping the wheel at 9:00 and 3:00.

Isn't 90 degrees a little close? Wouldn't 45 be better?
