My first thought would be to check with VCDS and make sure all of your vent flap motor/solenoids are working. If any of them are bad, they will throw a code.

On my 2015 A3, two motors went bad, and my windshield would fog up. After I had them replaced, all is well again.

Do you manually turn the AC off?
If you leave it in auto it will run the AC to pull moisture out of the air. Also check in the car settings in the MMI, make sure the auto recirculation is turned on.

I also have this issue!
I run A/C almost constantly, even during the winter. That keeps me clear.
I come out some mornings and actually have water running down the inside of my windshield. Not streams, just traces of drapes and Not even during rain.
I have applied anti fog and have the windshield tinted, no help.

Leaking heater core or lines will cause that as well. Check your radiator water level. If low, Pressure test it.
