Perhaps I'm mechanically ignorant but why would this spike rpms and make drive-offs jerky?

Default I was referring to the loud "diesel" noise that for that first 30 seconds of startup
As for the idle...not exactly sure why. I have a '98 VW with a VR6 as well, and it does the same thing. An aftermarket chip helped to fis the rough idle.
