The buttons in the multi-button units in the B8 were just switches connecting J519 pins to ground (except the Drive Select buttons in B8.0, which was a LIN bus device). J519 sees current flow, button was pressed.
The multi-button unit in the B9 is a single LIN bus device. All the button presses are processed by the E791 electronics and passed to the J519 via LIN bus.

Like I said before, I went the OBD11 route as I did not want to make any changes to the wiring in my car. I did it once and it stayed for 3 years. It worked first time every time. But, I always keep my climate control on. Not because of the coding, I just never found a reason to turn it off.
Do what your feel comfortable with.
With my current car, all you have to do is stick 1/2 of one of those plastic bread ties below the switch and turn it off and it stays off. This has worked great for a year.

This "route" does not work on MY '22+, hence the need for the dongle. The coding is only for lower MY then current gen.
It was like 110 credits, IIRC on OBD11. Thankfully I had enough on mine to revert back when I sold off my MY 18 to not always on. Did it in the dealer's parking lot on the trade.

I didn't bother turning it off on GV70 with 2.5T engine. I can hardly tell it is restarting at most stop lights. In the SQ5 it was really noticeable and annoying. Apparently they have figured out how to stop the engine in a spot which minimizes the energy required to get it restarted. I'll save a tie wrap just in case.
However in '18-'20 it's way more noticeable
