Re: 08 S5, are you in the Wilmette/Glencoe area?
I'm in Elmhurst, had mine since Christmas. But I've seen a total of three. 1 S5 in the city by State and Wacker, another in the parking lot of Dave and Buster's in Addison, and an Ibis A5 on 290 heading west out of the city.

The Phantom has a pearlescence, with flecks of green, anthracite, and purple.
... whereas the Brilliant Black is a pure black.
My car is Phantom:

It comes down to the a) depth of "black" you want, and b) the amount of maintenance you are willing to do to keep up with swirling of the finish. Brilliant Black is a stunning, deep black, but it shows dirt and swirls readily. The pearlescence of Phantom slightly minimizes the appearance of swirls vs. Brilliant, as it gives the eye something to focus on other than swirls and probably slightly diffuses the light that the swirls reflect. In the right light, the pearlescence is gorgeous (you can barely see it from this pic, but look at the warm reflection in the dead center of this pic):

But in certain light, the pearlescence can make the finish look dusty:
