Over the past few summers, my A/C keeps getting colder, requiring me to keep upping the interior temp setting to 70F, 73, 75, and now up to 76F just to keep it comfortable. (this is in Auto mode)

Sounds to me like a sensor problem or maybe an air flap issue -- any ideas? I have VAG-COM but am not sure where to start with this.

You may getting a better response from the VCDS forum, but I would go through the measuring blocks for the engine module (01) and auto HVAC (08) and see if you can get a sensor reading for interior temperature.
