Default 91 V8 Quattro overheating issues

I recently started getting overheating issues with my v8 quattro, so I took it to the dealership and they replaced the thermostat and the temperature sensors and that helped but the car is still running up to between 110 & 120 and has overheated on the road. The engine fans are working but only manually when i turn on auto or bi-level on the climate control. They won't come on automatically when the temperature climbs.

Any ideas what I'm looking at or troubleshooting I could do?

Thanks for your help.

Are they working at all three speeds? If not then the resistor is most likely the cause. Also there are two temp sensors on the V8, the one on the pass. rear head is for the ECU temp, not the fan - do you know which was replaced?

Also the Rad could be full of crap and need a good flush (which is where I would start, if the fans are working).
