I'm too hot, fat, bald, lazy, overworked, broke, etc., to STFA or check Bentley. 1 bottle white Bordeaux + 15 hour work day (on my day off) + 90+ degrees. My A/C turns on and off over and over again when I start my car until it is fully warmed up. Once it is warmed up it is all good. Until I get in traffic. Then it turns on and off again. Maybe 30 seconds on, 30 seconds off.

I know it has been said before that this is a normal "protection" mode but I doubt if, in 1995, that someone who paid $50k for one of these would have to put up with this. I think it is something else.

So, before I get the multimeter out or start putting any effort in, what should I be looking at? Maybe an electric fan not kicking on at low speed? I've had every other part of this car apart ( sometimes 5,6,7,8 or more times) but never looked at anything up by the fans.

I had a faulty CC unit that would shut down on its own, then re start and so on... Bought a used one and things are back to normal.
Not sure if this is the same problem as you have.
