I am thinking about moving to a coupe quattro 20vt. So this would most likely be a project build. Should I just try and sell the urS4 and then source everything for the coupe or get the coupe and transplant the parts I need and then part out whats left of the S4?

I'm in the middle of the process, I have a URS4 as my daily, and my coupe is my project. I found a cheap URS4 (1500 bucks) and have been parting it out to find my project and donate it's engine. I am going with a very OEM approach, trying to keep costs down.
My advice is to weigh your options. Ask yourself what your car is worth if you sold it vs what it is worth in parts. think about what you would drive in the mean time because obviously the coupe is going to be getting a transplant and will be off the road. If you buy a coupe and part your URS you would also need another vehicle to get your butt around.
In response to deephouse, I'm not sure what you mean. If you want to swap just the engine you can. For the time being I'm running the stock 01A transmission, Several people have done it and not had any problems. Until you are approaching 400+ WHP the 01A should hold out, Unless you are at the drags every day doing 7k rpm launches.

My thought on it is:
I have a bicycle and wife's car to get around when needed.
Prep the coupe and then unbolt the urs4 items and bolt them right back into the coupe.
Plug in the VEMS ECU and swap a couple wires for it and then turn the key and test drive.
Its disposing of the urs when im done that is the largest concern. If I part it out I would keep all of the mods minus the coilovers cause those wouldn't be usable in the coupe.
I have considered selling it out right but not really sure that I would be able to get what I would want for it. It would come with what is listed in my sig minus the top three items unless I found a crazy serious buyer cause all of those are new.

Just source what you need for the coupe. We're about to release some parts that will make the coupe turbo conversion silly simple, the exhaust manifold being the biggest key to the puzzle. We have a new casting now made specifically for the coupe turbo 'converters'.
And if you're going to build up a motor anyway, the 7a is typically a better starting point. Less heat stress in the head, better cams, etc.
