So after a year I finally got my allocation, and to my great suprise the order form says build week 31 (28 Jul). With those dates, when is it safe to book flights?

Kathy Bis and see when the car will be available. It may take a week or 2 to have the car delivered to the Delivery Center itself, (I forget where the S5 is built). Once you have that bit of info I would think you can plan your trip accordingly. Good Luck.
