I think one towards the dome would have been better overall, or if I would have had more of the church in there. You can't bring a tripod up there so you kinda just have to do your best to keep em level, first time ever attempting one.

btw...you don't need to keep it level if you're using autostitch

I think you got the composition just fine - ~half in the shade and the rest in the sun. The only other vertical comp. I can think of would be all of the buildings in the sun.
and for the panos w/o a tripod, just fire away alot of shots not only on the horizontal plane, but also the vertical plane - Autostitch will take care of the rest and you crop accordingly =-)
