My 20D has some parameters for saturation and sharpening and so far I've left them set at 0 figuring that I could get better results if I processed them on the computer. Should I let the camera do some of the work instead? Thanks!

or right in the middle.
Any processing the camera can do, a computer can do better and with more control. It really doesn't add that much time either if you're just doing the basic stuff.

If you're shooting RAW, leave them at 0 and let your editor do the work.

And the odd time I shoot JPG for quick stuff, all of it is at +1.

It was the running joke at the Athen's Olympics. The busses leaving the venues were on hour schedules. The first bus was called the Nikon bus, the second one (an hour later) was called the Canon bus, as the Canon shooters needed an hour longer to color correct their images before transmitting.
