A whole bunch of things are different.
1. 3.0l heads have different cam timing requirements, you have to set the timing on all 4 cams vs. just the exhaust cam on a 2.7.
2. No cam chain or tensioner to go bad and make noise.
3. The ports are the same size as 2.8L or RS4 heads, they seem to match a RS4 intake gasket pretty well.

but are typically worth the extra expense in high perf applications. The sodium inside the valve melts and splashes up and down inside the valve stem, conducting hear away from the valve plate (part that makes up the combustion chamber) and toward the valve guide area inside the head. Helps maintain compression better over the life of the engine.

Audi dealers are also replacing a ton of 3.0L heads because they sludge up. Starting with bank one.
