If I understand this correctly, the 360 HD will output 1080P through its component outputs (no HDMI for now). Does the PS3 do 1080P only by outputting through its HDMI or does it also have component out for the 1080P? Just curious because some projectors only have component in inputs.
Also what happens if your projector can only do 720P or 1080I? Can both units be set to a 720P output setting?

Through its HDMI 1.3V output or both?
Since I have not used HDMI yet and from reading in the past there have been several issues with that method of connecting audio/video components together would the HDMI 1.3v of the PS3 work with a non HDMI 1.3v equipped audio/video component? In other words is it backwards compatible?

The movies companies were keen to ensure their 1080p content could only be viewed if the output was via HDMI for obvious copyright reasons with the new players. I would be surprised if it's not the same deal with the video game machines.
