What kind of temperatures are you seeing? I need some benchmarks.

I am seeing peaks to 1400F under max load (5th gear, 80-100) with the probe mounted in the test port in the downpipe.

If anyone has any clever tricks for generating an accurate tempereature reference in the 1000+F range, let me know.

I've got an EGT probe (innovate motorsports) in 'close' to the same location on my wagon, in the first o2 sensor port on the stromung downpipe, maybe an inch or two further downstream from where yours is. The highest I've seen at that location is around 1450 (GT3071 turbo, RS2 EM, standalone management)

...that said, our numbers shouldn't be to far off as EGT's is more of a universal thing. With all my upgraded goodies (turbo, injectors, full cat-less exhaust, etc) on a 4th gear pull it will creep to 1550. This is still safe, and I've never seen it go higher than 1600 on my VDO gauge.

That said, my probe is mounted in to what my knowledge is a better location. It's about an inch or so away from my #3 cylinder on my headers. This is known to be the hottest cylinder, so it will provide the best reading. Where you guys are mounting your probes, to my understanding, would be the perfect place for a wideband a/f probe. That said, it should still work for EGT's though I'm willing to bet they're higher in the header.
