Or maybe aiming any headlight for that matter. I have a problem.

It took me a while to dial in my Euros to get the farthest illumination w/o blinding oncoming traffic (believe me I do not want to stand out with illegal headlights and bulbs). At this setting, however, the high beams basically shoot into the air, about 5-20 feet high from a couple of hundred feet away.

Is this the correct setting?
Is there a way to adjust the highs separately somehow?

TIA

With my Valeo Euro's, the high and low beam is all within a single H4 bulb thus any adjustment you make to the low beam will carry over to the high. I'm not really sure if the Bosch units act the same, but I'd guess that they do as the stock headlights only have adjustments for the entire headlight....you can't adjust just the low beam.

From the sound of it, you've got the adjustment set too high. Follow the FAQ on the Stern Lighting website for info on aiming E-code headlights.
