when cruising at 180kph te temp shoots up to 130 degrees C...
is this norm or should I check, for example, the thermostat...

When I ran my 86 CGT over 90mph for a sustained amount of time, in the summer, its oil temp would climb to 130, and stay there. But never higher. It worried me to the point I wanted to put on an oil cooler setup from a turbo Audi. Several Audi Guru's told me it wasnt needed, especially running Mobil 1 oils. The CGT lasted 13+years without an oil related problem.
Visiting the S4 forum there is a posting about "OW-40" oils. One person stated 15w-50 raises his oil temps 30C compaired to using 10w-30. Ya may try some 10w-30 and see if your temps
go down?

Your engine is actually "air/oil-cooled, water temp controlling".
