I was at the boneyard on 145th and Western over the weekend. I ran across a Quattro coupe GT. It is a boneyard car but had a few nice things that could be cannibalized. Here is a quick overview:

-intact motor and trans (including shift mechanism)
-nice cloth interior (except driver seat)
-all headlights / taillights / fog lights
-front and rear clip
-nice grille
-pretty sure the dash and guage cluster was intact
-trim was pretty nice IIRC

There is probably some other stuff that you guys might find useful also but I don't know enough about the car to know what is a good find.
