I need to replace a leaky hose that comes from the power steering reservoir and is at one end connected to a metal tube via a hydraulic fitting. I got the spare hose (without a new hydraulic fitting), but I'm not sure how the hydraulic fitting functions. How does it work, how does it come off, what do I have to do to replace the hose?

and have someone put a new clamp on it. You have to have the right type of hose, you can't just go and buy some fuel/vacuum line from the local parts store and hope to clamp it on.

You're probably better off buying the whole line from the stealership.

I actually have the correct spare hose, but it came without the hydraulic fitting.

Do I have to twist it off?

The entire hose needs to be replaced. The line itself is not terribly expensive, and the installation is easy if done from the bottom. That line also acts as the p/s cooler, the hard line snakes around under the engine before meeting the pump. Collin is our installation / technical specialist, trained as a dealership technician, he has done the procedure before, and assures me it is no sweat. Call us if you need to, good luck!
