I just chipped my car and am having a great time.
I have noticed, however, that under heavy acceleration (floor it) the power seems to decrease at about 5k rpms (2nd gear floored).

Is this due to the fact that the torque "rolls-off" at about 5-5.5k (i.e. limitations of the engine w/ chip), or that the rev limiter (which is supposed to be at 7.1k is kicking in early)?

The K03 just can't flow enough air to keep boost pressure up above 5.5K or so. That's why I went to a larger turbo. Big bucks for big boost.

Check the APR published torque curves and you will find that is normal.

If it very sudden, then something else is going on that is not normal.

yes, the car's still pulling, just not as much as
before.....

I think it's normal.

lets off sooner. Are you still using your stock bypass valve?
