Yes, they lower the car more than it is if you have a sport pakage. Yes you must also buy quality shocks or kiss your ride quality goodbye, the total amount is 1.9"lower in the front and 1.5" lower in the rear from the NON-sport ride hieght. I believe, but could be wrong, that the sport option lowers the car .8".
I have a Bilstien Shock / H&R spring combo and I love it. It never rubs with 18x8.5" wheels and 225/40/18 SO2s, incedently I used 245/35/18s for a while and those didn't ever rub either. I also drove arond with stock sport springs and H&R springs for 2 months, garbage.
I don't know of a pic of a 1.8t with H&Rs but I'm sure there's one in the gallery. There is a pic of my 30v Avant with those springs however and can be found in the gallery Gallery/Black/Modified Avant
hope this helps,
Damon

The RACE springs lower as Damon has indicated. The SPORT springs lower 1.25" front and 1" rear. Mine actually came out 1.5" front and 1.25" rear lower than stock non-sport, with H&R Sport springs and Koni Sport shocks. HTH.
CraigB

Another view
