The best position for any single kid seat (infant, convertible, or booster)is in the center rear. Safest spot in the car.
With more than two, tough call. The Britax convertible seats with the head bolosers shown in 8 misbehavin's post will keep them from falling asleep in the airbag zone.

Foam exercise mats are great seat protectors.
I got some for around $10 at Costco, these are 2 ft square interlocking ones. Trim it up with a pair of kitchen scissors and put one on the base and one on the back of the seat. They are dense and thick enough that no marks or dents get through to the leather and they let you get a really tight fit with the seat.
