2000 Quattro 2.8 Cooling problem
Ok can update hat I have found out about my overheating issue. I hooked up my OBD2 scanner toady and ran the car down the street, less then 3 miles round trip, the car reached a temp of 245f and the aux fan never came on. when I got back to my house I checked the upper and lower radiator hoses the top hose was much hotter then the bottom. The gauge on the dash did not go all the way to the hot line and the car did not give any other warning. I am trying to come up with a list of possible solutions. Any experiences you may have to help will be most appreciated. The does have a brand new recovery tank on it btw.

From my experience, I would look at the thermostat. The temp difference from the top to the bottom hose would suggest a lack of flow. Your thermostat may be shot, preventing it from opening.

couple of things. 1, if the aux fan isn't kicking on, you could have a problem with the sensor for that fan, as well as the fan itself. If you turn on the A/C, does that electric fan run?
Thermostat being stuck could cause problems as well.
