I pulled the throttle body this afternoon, to see how it looked. It was sparkling clean. I also reseated the plug on it and checked the connectors for corrosion (there was none).
The throttle valve adjustment is still failing. I watched the valve while the VAG.com attempted to make the adjustment, and noticed that it's only opening a tiny bit before closing again. Isn't it supposed to go to WOT?
I cracked open the plastic cover on the side of the throttle body and peeked inside. The gears and things inside looked clean, but it screamed "no user servicable parts", so I put it back together.
Is there a published procedure for testing the throttle body assembly? The Bentley doesn't have anything to say about it, and I don't see anything in the tech section. Google indicates that 1.8t.org used to have a relevant PDF file inside Quattroman's directory, but it's 404 now.

Ok, so, bad throttle body.
How are we sure that it isn't a problem in the harness feeding the throttle body? A new TB is a $350 part, and I'm not altogether keen on getting one on a hunch.
If it's worthwhile, I wouldn't mind swapping mine out for a known good unit. Is there anyone in Southern New England who could be bribed with beer (in bottles!) and Thai food to take a run out to my place this weekend for a quick swap?

This message is for searchers from the future.
I replaced the throttle body with a new one, ran the throttle body adaptation via the VAG.com, and the stalling problem has gone away.
It only takes a few minutes to swap the throttle body. No special tools are necessary.
The tightening torque on the throttle body mounting bolts is 85 inch-pounds according to my Chilton's manual.
You should replace the throttle body gasket when you replace the throttle body. Be sure to remove any gasket scraps that might be stuck to the intake manifold.
