Default oil change

i've done engine oil change twice on my friends A4 B7. It's VERY hard comparing to doing oil change on japanese car.
I noticed that there's some kind of hole in the OEM plastic oil filter housing. I assume you stick a hose there to suck out old oil.
Does this mean i don't have to change the oil filter every time i do oil change?
I always make a mess when changing oil filter cause it's so hard to reach with a changing tool, and because of the way it's located.

Also, do i just use castrol 5w30 for the oil change in california?

The filter housing has a drain - there's an external cap and then you push in the seal to drain the cartridge. I use a modified funnel and drain pan to catch this oil. I actually remove the filter housing from the top with a large socket. I use a mity vac to suck out the oil from the top. Never have to remove the shroud under the car, etc. Castrol 5W-40 or Mobil 1 0W-40 should be used.

behind the front wheels there is a strong metal piece, its the only exposed metal thats not covered with the plastic trim.
