Are you going for just raw acceleration or overall power delivery and feel? (more)
A chipped 1.8T's power delivery is going to feel vastly different than a naturally aspirated 6 cylinder like the 3.0.
Also, there is definitely more room for increasing the power above stock on a 1.8T, so if you're an enthusiastic that wants to continue doing things to get more power out of the car, you'll have more fun with the 1.8T. For the 3.0, you can chip it (when a chip becomes available), but you won't get much more power until you dump the cash for a supercharger.

and once you dump the cash on the SC you'll be in the 300-330 range depending on who you use
Once I hit 10k miles I'm going to either get the PES (if it's out) or seriously look into the ABT option.
