nothing wrong with either way imo. For best results, open only when pushing back. Otherwise
fluid from the line also flows out as it is replaced by air. So more effort is needed to bleed the entire system.

it shouldn't unless one added fluid to compensate for very low brake pads...
or at least pump the brakes back after installing new pads on one axle before moving to the next

Actually, there's no way air can get in. The fluid will gravity feed out the bleeder...
till you close it.

Mainly becasue with the bleeder closed, you have to use force to push the piston back in.
That means you're pressurizing the line backwards, and could theoretically pop the reservoir off, or worse, blow a seal in the piston if you're as unlucky as I've been in the past.
