P&P=Port and Polish
The porting increases flow by reshaping and enlarging the intake and exhust tracts by cutting away at the side walls. The polishing smooths the surface walls to increase flow and reduce the build up of combustion deposits on the exhaust side. On the intake side there's a "rough" polish which helps mix the air and fuel before it enters the combustion chamber. So in theory the atomized fuel burns better resulting in more horsepower and better fuel economy.

The five angle valve job also improves air flow by cutting the seat and the valve. The added benifit is a tighter seal so less leak down. (they acutally pour water with the valves in the head to ensure a tight seal)
